Hawaiian Loco Moco

This Covid-19 pandemic has made people better cooks, bakers, and experimenters. I’m finding more people looking for ways to be creative in the kitchen. It has even got me to experiment and try out foods that I normally would not have tried. Today I thought I would find a recipe that was delicious as well as easy (especially when things are limited in stores).

I decided to try out a simple Hawaiian meal called Loco Moco. It is a dish made from ground beef, gravy, egg and rice. It is commonly found in many restaurants in Hawaii.

To make the patties, you will need 1 lb ground beef, 1/2 tbsp onion powder, 1/2 tbsp garlic powder, 1/4 diced onion, 1 egg, 2 tbsp Worcestershire sauce, salt and pepper.

I’m never a huge fan of raw onions in my patties so I like to take the extra step and sauté the onions until they are translucent. Do this with all the onions that you need for the meal. You will need 1/4 cup onion for the patties and 1/4 cup onion for the gravy.

Add all the ingredients for the patty in a bowl. Mix well. You can also add about 1 tbsp of flour to help bind the patty but I find the egg does a good enough job.

Make 4 patties from the mixture and fry the patties in a frying pan on medium high heat. Avoid flipping it too many times as you want a nicely browned crust. Cook the patties for about 3-4 minutes per side.

While the patties are resting. Make the gravy. You will need 2 tbsp flour, 2 tbsp cornstarch, 2 cups beef broth, 4 tbsp butter and 1/4 cup onion. Begin by making a roux. Add the 4 tbsp of butter into a saucepan. When it is melted, add 2 tbsp of flour. Stir the flour and cook for a couple minutes until the flour and butter bubbles and turns slightly brown.

Slowly add 2 cups of beef broth and stir until the roux is mixed in. Add the 1/4 cup of onion and let this bubble and cook for about 20 minutes. If the gravy is not thick enough, mix 2 tbsp of cornstarch and a bit water. Add this a little bit at a time until you get the consistency you want. Once the gravy is ready, I also added all the brown crispy bits from frying the patties. Why waste it?

The final piece of the meal is the fried egg on top!! Pan fry it in a bit of butter to make it extra delicious.

To assemble, scoop a bowl of rice onto a plate, add the beef patty, drizzle it with a heaping spoon of gravy and then top it off with the egg. Serve right away!!

This dish definitely brought me back to Hawaii!! Try adding your own personal touches to the dish like mushrooms in the gravy, or adding pulled pork to the dish! Give it a try and let me know what you think. Aloha!

  • 2 tablespoons flour
  • 2 tablespoons corn starch
  • 4 tablespoons butter
  • 2 cups beef broth
  • 1/4 diced onion

    Like a lot of Hawaiian dishes, this sounds a little bit weird to me but very delicious!! Can you tell me what the side dish in your final photos is? It looks like big green onions. Thank you!!!

      They are a Chinese vegetable called bok choy. Not very Hawaiian but it was what I had in the fridge at that time.
