Banana Roti

I stumble across this recipe while watching videos on Youtube. It looked simple and delicious. I had to try this and as a busy working mom, this was my type of recipe. This is a take on Southeast Asian street food. To make this recipe, you will need frozen plain roti, ripe banana and condensed milk. I used this lacha found at my local grocery store because I couldn’t find roti. It still worked out.

Frozen roti (or lacha) comes in individual sheets. This is super convenient and that is what makes this recipe so easy.

First prepare your bananas by slicing them into bite sized chunks.

Heat up a pan with a little butter. Remove the plastic dividers. Place a frozen roti on your pan. I like to have my pan at medium high or medium.

On top of the roti, place a few sliced bananas.

Place a second roti on top and press down the edges to seal. You might need to let it melt a little first.

Once sealed, allow the bottom to get brown. You can lift up the edge to check to see how brown the roti is.

Flip over and brown the other side.

Once both side have browned, remove to a cutting board and cut up into pieces. Top the roti with condensed milk and serve hot. Enjoy.
