For my nephew’s party, I wanted to make something special. I decided to make cupcakes because I hadn’t made them in ages and they are always a hit at any party. This is a cookies and cream cupcake recipe from The Scran Line . Its an amazing site, full of beautifully done cakes, cupcakes and other eats.
I started my prepping the Oreo cookies. Since it was my nephew’s party, I wanted to use some mini Oreos dipped in white chocolate and sprinkles. I chopped some white chocolate and melted them in the microwave. Don’t overheat the chocolate as it can easily burn. Once the white chocolate is melted, dip the Oreo cookies and lay them on some parchment paper. Before the chocolate hardens, add some sprinkles. Let these cookies cool until the chocolate has hardened.
For the batter, combine the dry ingredients in a bowl. You will need 3 1/2 cups flour, 3 tsp of baking powder, 1 1/2 cup sugar and 1/2 teaspoon salt.
In a separate bowl, combine the wet ingredients. You will need 1 1/2 cups milk, 1/2 cup vegetable oil, 1 teaspoon vanilla extract, 2 tablespoons of sour cream, and 2 eggs.
Before adding the wet ingredients to the dry, blend in the butter with the flour mixture. You want to combine the ingredients so that it looks like crumbs.
Slowly add the wet ingredients to the dry ingredients and blend until mixed.
The last ingredient is 1 cup of cookie crumbs.
Mix the cookie crumbs until it is well mixed.
Portion the cupcake batter into the cupcake liners. Fill the liners only 3/4 full.
Bake in a 325 F oven for about 30 minutes or until a toothpick comes out clean.
Transfer the cupcakes to a cooling rack and cool completely before icing.
Instead of a buttercream icing, I opted to use a basic cream cheese icing and add cookie crumbs. First beat 1/2 cup of butter until it is smooth. To the butter, add 8oz cream cheese. Slowly incorporate and been in 4 cups of icing sugar. When everything is combined blend in 1 cup of cookie crumbs.
Using a round piping tip, pipe the icing in circles. I like to pipe directly on the tray I plan to carry it in. This prevents me for touching any icing.
When you are done icing all the cupcakes, place the Oreo on top. If you do not plan to serve these right away, leave the Oreo cookies until you are ready. The cookies do get a bit soft and soggy if left on for too long.
I like to serve the cupcakes right away (before you eat them all yourself). Enjoy these cupcakes!
