Non-Dairy Creamer

Going dairy free can be hard. Especially when you love the rich creamy taste of milk in your coffee.  I have been looking for an alternative for quite a while.  The soy creamers that are available are usually full of sugar (which as you know I cannot have).

I tried hemp milk, almond milk, cashew milk, oat milk, but my favorite is rice milk. I found that the flavor wasn’t that strong and it was pretty creamy.  This week I decided to try making my own creamer. I searched for a few recipes online but most used nuts. I am not a huge fan of nuts because unfortunately I also have cold sores.  The arginine in nuts may cause cold sores to flare up, so I try to avoid them as much as possible.  For this recipe I used store bought rice milk. I still need to find a good recipe for homemade rice milk.  I love the enriched Rice Dream. It has a natural sweet flavor.

Pour the entire contents into a sauce pan and simmer until it is half of its original amount. This took about 1 hour.  This is your base for the creamer. You can now add different spices and flavors. I went with a classic vanilla flavor sweetened with coconut sugar. The results were pretty amazing. It was much creamier than straight non-dairy milk and its super easy to make. I am definitely trying this again.

Non-Dairy Creamer

  • 1 box of Rice Dreams (enriched) (1 L)
  • 1 tbsp of coconut sugar
  • 1 tsp vanilla extract

Pour one entire box of rice milk into a sauce pan. Bring to a boil and simmer until the mixture is half in volume about 2 cups.  Add flavors of your choice. I added 1 tsp of vanilla extract and 1 tbsp of coconut sugar.
