Viennese Hot Chocolate

I live in Vancouver and always want to go to the hot chocolate festival but I am a little lazy to travel around the city to get them. I would rather make something at home.

I recently tried this interesting hot chocolate recipe recently and really enjoyed it : Tea Hot Chocolate. I decided it was time to try another recipe out. This Viennese Hot Chocolate recipe was a little surprising to me as it contains egg yolk. But after trying it, it is silky and smooth and very rich. 

This is a simple recipe. You will need some chocolate. I used dark chocolate because that was in my pantry. Chop the chocolate in tiny pieces.

Heat your milk on low. Add the chocolate and stir until the chocolate it completely dissolved. At first the chocolate will seem grainy but as it dissolves the liquid will get smoother. Don’t let the hot chocolate boil. Simmer on low until it is completely smooth, about 3 minutes.

At this point you can add more sugar if the hot chocolate is not sweet enough. Remove the hot chocolate from the heat and temper the egg yolk. You can do this by adding 1-2 tbsp of hot liquid into the egg yolk and mixing. Then pour in the egg yolk mixture into the pot. This prevents the egg yolk from curdling.

Stir again on low heat until the egg is complete mixed in. Pour into cups and top with whipping cream. This is a thick, rich cup of hot chocolate so you don’t need much. Hope you get to try this out. Enjoy.

  • 6 ounces dark chocolate
  • 1 1/4 cup milk (whole milk)
  • 1 egg yolk
  • sugar to taste
  • optional: whipping cream

Chop up the chocolate in tiny bits. In a saucepan, heat up the milk and chocolate on low.

Keep stirring until the chocolate is completely dissolved and the liquid becomes smooth. You don’t want it to boil. At first it will seem grainy but keep stirring and the chocolate will melt into the milk. This will take about 2-3 minutes.

Remove from the heat. Add sugar to taste. Temper the egg yolk by mixing the egg yolk with 1-2 tbsp of the hot liquid. Stir well and then pour into the saucepan. Whisk together and put back on low heat to heat up. Heat for 2-3 minutes.

Pour into cups and top with whipping cream if you wish, or just enjoy as is. This is a thick and rich hot chocolate so you only need a small cup. You can adjust the sweetness and amount of milk if you prefer your hot chocolate to be sweeter and a little runnier. 

The egg yolk adds a creamy rich element to this drink. You don’t even notice that it is there.
