Cottage Cheese Pancakes

These are easy protein packed pancakes made with three ingredients.

Put the cottage cheese, oats and eggs into the blender. Blend everything in a blender. Cook batter on a hot griddle. Flip after 2-3 minutes or when nicely brown.

Cook the rest of the batter and serve hot with fresh fruit and maple syrup.

Ingredients (makes 8 small pancakes)

  • 1/2 cup cottage cheese
  • 1/2 cup oats
  • 2 eggs
