Zucchini Taco Boats

A fun way to eat tacos is making zucchini taco boats. This is a simple recipe that is both delicious and healthy. Start by preparing the zucchini. Cut the zucchini in half and core out the center. You can use a spoon or melon baller.

Preheat an oven to 350 degrees. On a baking sheet, place the cut zucchini upside down and coat with olive oil. Bake the zucchini for about 20 minutes. Remove from oven and flip zucchini over. Set aside.

In a frying pan, cook 1/2 lbs ground beef. Add 4-5 tablespoons of taco seasoning or more if you want a strong flavour. Cook till the ground beef is done. Season with salt and pepper.

To assemble the zucchini boats, portion out the ground beef into the zucchini. Top each with salsa and grated cheese. Return the stuffed zucchini back into the oven for another 10-15 minutes or until the cheese has melted. Remove from the oven. Garnish with cilantro and enjoy!
