Have left over pickle juice and don’t want to waste it? Try marinating some chicken in it. This is probably the easiest brine there is. I think this would be great on a burger or as chicken fingers (which I did try the second time I made this).


Remove the chicken from the brine and dry with paper towels. You can bread the chicken or bake as is. There is a slight pickle flavor to the chicken but it isn’t over powering. The chicken is quite juicy and did take on some salt from the brine. I enjoyed the chicken as chicken fingers but I can see that this would be great on a burger or even tossed in some salad. Try this next time you finish a jar of pickles.

Pickle Marinated Chicken
- Pickle juice (enough to cover your chicken – about 2-3 cups)
- Chicken
Cover your chicken with the pickle juice. Make sure there is enough to fully cover the chicken. Marinade your chicken in pickle juice over night.
Remove and dry the chicken with paper towels. You can bake the chicken as is or toss the chicken in some bread crumbs.
Enjoy in a variety of dishes.
