
I discovered these amazing cupcakes the other day when I needed to quickly make some gluten free cupcakes. They turned out amazing and are super easy to make. The ingredients are simple and the cupcakes turn out oh so chocolatey.
To make these you need butter, eggs, vanilla, sugar, cocoa powder and chocolate chips… oh and don’t forget the salt!

To start, melt some butter and chocolate chips together.

I melted them in the microwave.

To this, add your sugar.

and eggs.

and cocoa powder.

Then mix well and you are done for the batter.

Portion out into cupcake tins. I made 11 cupcakes from one batch.

While the cupcakes are baking, make the icing. For the icing, melt more butter and chocolate chips.

Again just use the microwave.

Allow this to cool to room temperature.

Cool the cupcakes well before icing them.

Spoon some icing over each cupcake and allow the icing to set in the fridge.

These are ready to eat right away or can be made the day before. They taste best when you let them sit and warm up to room temperature.

You can make them fancy by decorating them but they are just perfect the way they are.

For the batter
- 1/2 cup butter melted
- 1 cup dark chocolate chips
- 3/4 cup sugar
- 1/8 tsp salt
- 1 tsp vanilla
- 3 large eggs
- 1/2 cup unsweetened cocoa powder
For the icing
- 1/4 cup butter
- 2/3 cup dark chocolate chips
Preheat the oven to 375 Degrees.
Batter: In a microwave bowl, melt the butter and chocolate chips.
In a large mixing bowl, mix together the melted chocolate, sugar, salt, vanilla, eggs and cocoa powder. And yes add the salt, it will enhance all the flavors. Portion the batter into 11 cupcake tins. Bake for about 25 min. Check with a toothpick to see if the batter is cooked. Cool cupcakes on a cooling rack.
Icing: While the cupcakes are baking, time to make your icing. Melt together the butter and chocolate chips. Allow this to cool at room temperature until the cupcakes are ready to frost.
Assemble the cupcakes by spooning the icing over the cooled cupcakes. You can help the icing set by placing in the fridge for a couple hours but these are ready to eat right away. They taste best when they are room temperature.
