I’m currently going through a mini elimination diet and have removed egg and dairy from my diet. Its hard to get rid of two of my favourite ingredients. They are found in a lot of different things like breads, pasta sauces and even desserts. I decided to try out a vegan buttermilk pancake recipe since I normally make pancakes or crepes on the weekend. It turned out really well and I enjoyed them as much as regular pancakes.
Begin by creating the vegan buttermilk. Mix 1 cup oat milk with the 1 tablespoon of vinegar. Let this rest for 10 minutes.


In a mixing bowl, add 1 cup flour, 2 tablespoon icing sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.


To the buttermilk, add 1 tablespoon olive oil and 1 teaspoon vanilla extract. Slowly mix the buttermilk mixture into the dry ingredients. Let it rest for 5 minutes before cooking. This will allow the baking powder to activate.


Cook the pancakes in margarine or oil. Pour the batter into the frying pan and let it cook. You will know when it is time to flip the pancake by watching for bubbles forming at the edge of the pancake. This should be about 2-3 minutes. Flip the pancake and let it cook for another minute or two. Transfer to a plate and continue cooking the rest of the batter.
Serve with fresh fruit, maple syrup or your favourite pancake topping! Enjoy
