I love crushed cucumber salad. It is a perfect blend of spicy, tart and salty. The cucumber give it a fresh crunch and of course it is garlicky. For this version, I used Chiu Chow chili oil.

Start by cutting up your cucumber into bite sized pieces.

Smash each one.

I ended up cutting them smaller.

Add some chili oil. If you like spicy, add the amount in the recipe. If you don’t add a little less.

Add some fresh crushed garlic.

and some black vinegar to make it tart.

don’t forget the sesame oil.

Stir together and let marinade for a couple hours or overnight.

Serve as a sized dish and enjoy with some rice.

Spicy Crushed Cucumber Salad
- 1 cucumber
- 2 tbsp Chiu Chow Chili Oil (for a spicy salad, use less if you want it less spicy)
- 1/2 tbsp of black vinegar
- 1 garlic clove crushed
- 1 tsp sesame oil
Cut the cucumber into bite sized pieces and smash with the flat side of your cleaver. Add all ingredients together and mix well. Marinade for a couple hours or overnight.
Enjoy as a side dish.
