Easy Yogurt Banana Bread

Have left over yogurt and over ripe bananas?  Can’t eat eggs?  Well here is a recipe for you!  Super easy and quick to make.

What you need is yogurt, banana, coconut sugar, butter, flour and baking soda.

Mash the bananas.

Add the coconut sugar, yogurt, melted butter and mix well.

Add the flour and baking soda and mix.

Spray a baking container with some oil. Pour the batter in and bake for 40-55 min.

The cake is done when a toothpick comes out clean.

Enjoy. This is a super moist yummy cake. I would definitely make it again but probably cut the sugar by half and add chocolate chips and nuts to it.

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 cup coconut sugar (I would cut it down to half that amount)
  • 1 cup greek yogurt (I used a plain 11% one)
  • 1 tsp baking soda
  • 1 1/2 cup flour

Preheat the oven to 350 degrees. Mash the bananas and add to it the melted butter, sugar, and greek yogurt.  Mix well.  Mix in the flour and baking soda.

Pour the batter into an oiled baking container.  Bake for 40-55 minutes or when a toothpick comes out clean.

Enjoy with some ice cream or coffee.
