Bacon Carrots and Roasted Cauliflower

There has been a couple of bacon recipes on this food blog but I could not get enough of these bacon wrapped carrots. Along with the carrots, I made some roasted cauliflower. They work well together because they cook at the same time.

Prepare your carrots by peeling them. I left a bit of the green top for aesthetics.

Wrap each carrot with a slice of bacon. Tuck the bacon in on itself to help hold it together when baking. The nice thing with bacon, is that you don’t need to add any salt or oil when baking.

To prepare the cauliflower, cut the cauliflower in decent chunks.

Coat the cauliflower with olive oil, salt and pepper and then sprinkle some garlic powder over it.

Bake in a 400 degree oven for 45-50 minutes or until carrots are tender.

Enjoy with some baked chicken and roasted parmesan fennel!
