Who knew that adding potato chips to your chocolate chip cookies would be good? I tried this recipe for cookie exchange over the holidays and its now my husband’s new favourite cookie.

Preheat oven to 350 degrees.
In a medium bowl, mix 2 1/4 cup flour, 1 teaspoon baking soda and 1/4 teaspoon salt.

In a separate bowl, add the softened butter and with a hand mixer, slowly incorporate 1 cup brown sugar and 1/2 cup sugar.
Add the 2 eggs and 1 teaspoon vanilla extract. Mix until combined.

Slowly add the flour into the butter mixture. Beat until combined. Using a spoon, stir in 2 cups of the crushed potato chips and 2 cups of chocolate chips. Save 1/2 cup chips for the topping.

Spoon out 2 tablespoons of the cookie dough on to baking sheets. Leave some space in between the cookies because they do expand a bit. Top each cookie with a couple crushed chips.
Bake for 15-18 minutes or until the cookie edges are golden brown.
Let it cool for 5 minutes on the baking tray until you transfer it to a wire rack.
Enjoy!
