Chocolate Haupia Pie

on

Haupia pie is a delicious and easy pie that is served in Hawaii. I love the creamy coconut flavour.

Begin by baking a pre-made pie crust according to the directions on the box. Once cooked, let it cool to room temperature.

In a small bowl, combine 1/2 cup whole milk with 5 tablespoons of cornstarch and mix until cornstarch is dissolved. Set aside. In a saucepan, whisk 14 ounce coconut milk, 1 cup whole milk, and 1 cup sugar. Heat on medium heat and bring liquid to a simmer.

Stir the cornstarch mixture and slowly add mixture into the saucepan. Continue whisking until the mixture becomes thick.

Remove the haupia from the stove and add 1 cup of chocolate chips. Mix until it is well combined.
Add the mixture into the pie crust and smooth out with a spatula.

Cover and refrigerate overnight. Add some whip cream before serving or serve by itself. Enjoy!!
