Bitter melon is a vegetable that you love or hate. I remember having it as a kid and not entirely loving the bitterness. My sisters and I would dare each other to eat the bitter gourd and see who ate the most. Over time, the bitterness grew on me and I would tolerate dishes that incorporated this vegetable.




Prepare the bitter melon by slicing it in half and then removing the spongy center. Thinly slice the bitter melon. Put slices in salted water to remove some of the bitterness. Let it soak for about 15 minutes. Rinse the bitter melon before using.





Add the soaked bitter melon in to a frying pan set to medium. To the frying pan add 1 tablespoon oil, and 2 teaspoon sesame oil. Cook the bitter melon for 4-5 minutes or until the bitter melon is tender.
Add 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 2 tablespoons cooking sake and a teaspoon of dashi powder. Mix and let the bitter melon cook in the sauces for about 1-2 minutes.
In a separate bowl, beat the 2 eggs. Pour the eggs into the frying pan and cook for another 2-3 minutes.
Serve over some rice. Enjoy!
