There has been some interesting viral recipes floating around the internet recently. This was one that a saw and I decided to modify it using what I had as I did not have the traditional ingredients. It is a Vietnamese street food dish usually topped with meat, cheese and pork floss. The main part of this recipe, is the rice paper and eggs and the fun part is that you can put whatever toppings that you want.
I tried using 3 eggs for one rice paper but thought that it was too much. For the filling, you can try anything you have on hand. I used peas and corn and seasoned it with some salt and pepper and garlic powder.
In a dry frying pan, place the rice paper directly on the hot frying pan.
Spoon some egg all over the rice paper.
Place the toppings on the egg and allow to cook on medium- medium high.
Top with some sauces, ketchup, mayonnaise or anything of your choice.
Fold in half and remove from the pan.
This makes a nice simple breakfast, or snack. The rice paper is crispy and you can almost eat it like a taco.
Rice Paper Pizza
- dry sheets of rice paper
- seasoning of your choice
- filling of your choice – meats, cheese, veggies etc
Place the rice paper on a dry frying pan medium- medium high heat. Scramble the egg in a bowl and season. I would say one egg per rice paper. Pour the egg on top of the rice paper and spread evenly.
Place toppings on top of the scramble egg and turn down the heat if it seems like the eggs need more time to cook. When the eggs seem cooked through, top with your sauce of your choice and fold in half.
