So you will start seeing a lot of posts that starts with… so my son is really into ____ , I decided to try to make to make my own.
Well this time my son is into Larabars. But I know that they have refined sugar in them. So I tried to make my own.
This recipe is super simple and can be modified. You will need dates, oats, shredded coconut and cashew butter.
Blend the shredded coconut and oat meal in a food processor until fine.
I added some cocoa powder for some extra flavor.
Slowly add in the cashew butter and dates.
You will get a mixture that starts sticking together. If it is not blending well, separate into smaller batches.
At this time add a little water to help the mixture stick together. I added about 4 tbsp of water. If your food processor cannot blend it together, mix int he water in a bowl. You can then put this in a greased 9X13 in baking tray or roll into balls. Place the baking tray in the fridge for a few hours and then cut into pieces.
Next time I would omit the shredded coconut because I think my son didn’t quite like the texture. But I found it was a good little snack to bring when you go hiking.
No Bake Energy Bars
- 2 cups rolled oats
- 1 cup shredded coconut
- 2 tbsp cocoa powder
- 2 1/2 cups packed dates
- 1/2 cup cashew butter
- 2-4 tbsp of water
Blend the rolled oats and shredded coconut in a food processor until fine. Add in the cashew butter and dates. Blend until the mixture starts coming together. You may have to divide the recipe into two batches. Add about 2 tbsp of water to get the mixture to come together. Add more if you need to. I added 4 tbsp as I wanted mine to be stickier and slightly softer. I also transferred the mixture into a bowl and mixed it by hand. You can then put this in a greased 9X13 in baking tray and place the baking tray in the fridge for a few hours and then cut into pieces. Alternatively you can roll them into balls like what I did. I froze half of my batch to save for later.
