German Currywurst is a delicious fast food dish consisting of pork sausage like bratwurst and a curry ketchup. Here is a recipe for a delicious curry ketchup that can be slathered on sausages. I wouldn’t know if this recipe is authentic but it sure is great tasting.
The base of the sauce is ketchup. Portion one cup of ketchup into a saucepan. Heat up the ketchup on the stovetop on medium low heat. Add 1/4 teaspoon of baking soda. This helps reduce the acidity in the sauce.
Adding the baking soda will make the sauce bubble. Keep mixing until the sauce returns to a ketchup look and consistency.
To spice the ketchup, add 4-5 teaspoon of curry powder (mild if you don’t want it too spicy), 2 teaspoons paprika, 1 teaspoon onion powder, and 1/8 – 1/4 teaspoon cayenne pepper.
Stir the spices in well.
To add more flavour, add 4 teaspoons of Worcestershire sauce and 2 tablespoons of water.
Taste the sauce and adjust to your own preferences. I tend to omit the cayenne pepper.
This sauce can be served warm over pork sausages (ie bratwurst) or used as a dipping sauce for other meats. Enjoy!!
