Artichokes are strange and foreign to a lot of people. I love them but they are expensive for the amount of stuff you get. Artichoke hearts are the meatiest and the most delicious part of the vegetable. Here is a simple way to cook them.
Begin by prepping the artichokes for roasting. Cut them in half. It is best to do this right before baking since artichokes can discolour and brown quickly.
Remove the inner “fuzz” of the artichoke. You can also remove some of the inner leaves as well.
Rub the artichoke in some lemon juice. This will help prevent it from browning. Coat the artichokes with lots of olive oil and a sprinkle of salt and pepper. Drizzle more lemon juice over the artichokes.
Flip the artichokes so the cut side is facing down. Roast the artichokes in an oven set to 350 degrees for 40-50 minutes or until the hearts are tender.
Serve with a side of soy sauce, melted butter or Worcestershire sauce. Enjoy!!
