Pickled Red Onion

Sometimes it is hard being a mom. You don’t often get much time to make fancy meals and sometimes a sandwich for dinner will have to do.  I recently came across a recipe that is really simple to make and can add a little something to your sandwiches and burgers.

Take about three red onions and slice them.To the onions you will add some apple cider vinegar, sugar and water.

Let this mixture sit in the fridge over night.

The next day the onions will turn a nice pink color.      Serve them on Vietnamese subs, sandwiches, burgers or salads.  It adds a nice vinegary, oniony crunch to your dishes. Next time I will experiment with adding jalapenos and maybe some spices to change it up.

Pickled Red Onion

  • 1 large or three small Red onion(s)
  • 2 tbsp Sugar
  • 1 cup Apple cider vinegar
  • 2 cups hot  water

Slice the red onion and place them in a jar. In beaker, add the 2 cups hot water and sugar and stir until dissolved.  Add the apple cider vinegar.  Pour this mixture over the onions. Let the onions sit in the fridge over night.  The next day the onions will turn a nice pink color. You can store leftovers in the fridge for other meals.

Enjoy with sandwiches, subs, salads and burgers.
