Fennel and Fava Beans

I have been experimenting with new veggies for the past couple of weeks. This time I had fava beans and fennel. I thought I would make a simple salad with these two items. Fennel has a mild licorice taste that adds some dimension to a salad and fava beans give the salad a different texture and taste.

I find that some fennel can be a bit tough. I recommend slicing them thinly if you are having them in salads. I also like using just the bulbs but I have seen some recipes that use the fennel tops. I’m not a huge fan of the taste.

Prepping fava beans takes a bit of time. You would need to remove the outer pod to get at the beans.

Then take the fava beans and blanch them in boiling water for 3-4 minutes. Don’t leave them in too long or you get mushy beans.

I also added some fresh parsley to the salad.

To top the salad, I used a store bought salad dressing (partly because I was too lazy to make it). The one I chose was a lemon and garlic dressing.

Toss all the ingredients together and serve over some fresh spring greens. Enjoy!

Ingredients

  • 1 cup Fava beans
  • 1 cup Fennel bulbs, sliced thinly
  • 1 Tbsp chopped parsley
  • Salad dressing
