A while ago, I bought some lavender to make some tea. The tea was nice but I bought quite a large bag so I had a lot of leftover. I decided to try this recipe out. Well this is just part one of the <secret> recipe. You need to come back to find out what I am going to make with this lavender simple syrup. This syrup is really easy to make and can be used to sweeten lots of things: tea, yogurt, or put it on some fruit.
You will need to buy some lavender that is intended for culinary purposes. You don’t need much, just 1/4 of a cup.
Boil the lavender in some water and then simmer for a couple minute. Turn off the heat and let the lavender sit for 20 min.
Strain the lavender.
The liquid will have a nice purply color to it.
Now make the simple syrup by adding sugar and water to a pot. Bring to a boil
Add the lavender liquid and simmer to reduce to desired thickness.
I wanted it to be a little thicker than water. Like a good maple syrup. You will end up with a nice dark syrup. Store in the refrigerator.

Lavender Simple Syrup
- 1/4 cup dried lavender
- 1/2 cup sugar
- 1 cup water
Boil the lavender in 1 cup of water. Simmer for 3 minutes and then let it sit for 20 or more minutes. Strain and set liquid aside. In a sauce pan add sugar and 3 tbsp of water. Boil for about 3 minutes. Then combine with the lavender liquid and simmer until you get the right consistency. I wanted it thicker like maple syrup. I simmered it for another 4-5 minutes. Cool and store in the refrigerator.
