Leftover Eskimo Ice Cream Loaf

I recently made Eskimo Ice Cream.  The ice cream was OK but it wasn’t my favorite so that meant I had a lot left over.  I decided I wanted to make something out of it.

I first blended the ice cream with an immersion blender. It looked gross and chunky.

I also had a lot of sourdough starter left over. So I decided to mix the Eskimo ice cream and the sourdough together.

It was a thick consistency, almost like pancake batter. I added a tbsp of baking powder and poured it into a spring form pan.

I baked the loaf for about 40 minutes and checked to see if it was done. The  result was pretty decent. I think next time I would add some more sugar to the recipe but it tasted great with some cream cheese and jam.
