Leftover Bread – Shake and Bake

The other day I was helping to host a party and I made some bruschetta and had tonnes of extra bread.  We had to eat it now or eat it later.  Well we saved it for later.  We toasted and stored them in a plastic bag in the fridge.

I used my food processor and ground the bread until is was fine bread crumbs.  To this I added paprika, onion powder, garlic powder, salt and spices.

I put the mixture in a plastic container.  I tossed the chicken in some olive oil and then put a few pieces of chicken in the container. Shake the container and toss to coat the chicken.

Bake the chicken in the oven for 30 minutes in a 375 degree oven.Shake and Bake recipe

I got this recipe from http://dishesanddustbunnies.com/homemade-shake-and-bake-mix-recipe/

  • 2 cups bread crumbs using left over bread
  • 1 tbsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tsp paprika
  • 1 tsp oregano or other spices

Using a food processor, blend the bread into crumbs. Mix the garlic powder, onion, salt, pepper and paprika to the bread crumb mixture.

Toss the chicken until it is coated well.  Bake the chicken for 30 minutes at 375 degrees.

Enjoy with pasta or salad.  You can use other spices to add different flavors.
