Eggs and Peppers

Somedays cooking for one can be tedious. I sometimes get so lazy that I end up just opening up a can of tuna and eating it with a bowl of salad. Today I decided not to be so lazy and make dinner instead.

This is an easy and quick light dinner that you can make. You can be creative and use other vegetables such as zucchini, instead of a peppers.  First cut the pepper and remove the seeds.

Wrap the bottom of the pepper with aluminum foil and crack an egg into the pepper. (I put two eggs in mine). Sprinkle a bit of salt and pepper on the egg. You can also season with herbs.

Place some cheese on top of the egg and place in a 350 degree oven. Bake for about 30-40 min or until the eggs are soft poached.

20150802_192118[1]The pepper will be soft and sweet, the cheese melted and the eggs deliciously cooked. Enjoy this simple light dinner!!
