Looking for an easy quick dish? This is one of my favorites. It is actually called Honeymoon chicken. It is sweet, sour and tasty.
For this recipe you will need lemon, poultry herbs (thyme, rosemary and sage), honey, garlic, olive oil and white wine. When a recipe asks for whole chicken, I prefer to use thighs or drumsticks. This way you are always getting the part you want.
Also try to use fresh lemon in your recipes. It makes a big difference. The bottled stuff just doesn’t cut it. Smash the garlic with the flat part of your blade and remove the skin. Place all the wine, lemon juice, honey, oil, herbs, garlic, and chicken in a bowl and marinade the chicken for a couple hours.
Place the chicken and marinade into a roasting pan.
Bake in the oven for about 40 – 50 minutes until the chicken is cooked.
Enjoy this with rice, pasta, bread or what ever else you like.
