Eat like a Saiyan….. Senzu Beans

Ever wondered what super saiyans eat? Well they eat Senzu Beans!

My version of a Senzu Bean is the Power Sphere from the Rebar cook book.  They make a wonderful snack for hiking, running, hockey or even dragonboating.  It is very simple and can be done a couple days in advance.  You can even freeze them and take them out when you need some extra boost of energy. This is a wonderful recipe to do with your kids since there is no cooking involved.

power spheresPulse the apricots in a food processor. It is easier to slowly add rice cake in the food processor while blending the apricots.

Blend until the apricots and rice cakes are fine in texture. Place in a large bowl and set aside.

In the food processor blend together the sunflower, pumpkin seeds and coconut until coarsely chopped.

Mix together in the large bowl.  Heat up the peanut butter to help make the balls stick together.  Add the sweetener to the bowl and blend everything together. I usually use honey or agave nector.

With a 2 tsp scoop portion out the dough. I find this very helpful as your hands do get quite sticky.

Roll each portion into a balls. Finally toss in coconut and sesame seeds to cover the outside of the ball.power spheres

You can store the balls in the fridge for a week or two.  Another option is to place them in the freezer and take them out when you need them.

1  1/2 cup dried apricots
4 brown rice cakes
1 cup unsweetened coconut
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/3 cup sesame seeds
1/2 cup rolled oats
1 1/4 cup fruit sweetener (I use agave nectar/syrup, or 1 cup honey)
1/2 cup natural peanut butter, slightly warmed

1. In a food processor, pulse the apricots, and rice cakes to a fine texture. transfer to a large bowl and set aside.

2. Next, pulse the coconut, seeds, and oats to roughly combine. add to the fruit mixture, along with the fruit sweetener and peanut butter.  Mix everything together until well combined.

3. Roll the dough into balls. I used a 2 tsp scoop to help make the balls uniform. Roll the balls in toasted sesame seeds and shaved coconut to coat, pressing them in slightly. Serve, or wrap in plastic and refrigerate.
