S’mores Cookies

This cold winter has made me miss the warm fire and roasting marshmallows. The nice toasted outside and gooey centers. Then using these delicious melted goo balls for making s’mores with graham crackers and chocolate. It is the perfect combo to beat the winter blues.

Begin by preheating the oven to 375 degree F. Prepare the baking sheets and line them with parchment paper.

In a large mixing bowl, combine 1 cup softened butter, 3/4 cup brown sugar, and 1/2 cup granulated sugar. Beat the mixture until combined and until it is creamy.

Add the 2 eggs and 1 teaspoon of vanilla extract. Beat into mixture.

In another bowl, combine 2 /2 cups flour, 2 teaspoon cornstarch, 1 teaspoon baking soda, 1 teaspoon salt. Slowly mix this into the butter mixture.

Add 2 cups of crushed graham crackers, 2 cups of mini marshmallows, 1/2 cups milk chocolate chips and 1/4 cup chopped dark chocolate baking squares.

Combine until well mixed.

Scoop 2 tablespoons of cookie dough onto the baking sheets to make one cookie. Continue making cookies until baking sheet is full.

Bake in the oven 12-15 minutes until the marshmallows are gooey and the cookie is slightly browned.

Cool for 2-3 minutes on the pan before transferring to a wire rack to cool. Store in an airtight container.

A trick with fresh baked cookies, take the cookie and pop it into the microwave for a few seconds. This will melt the chocolate and make the marshmallow gooey again. Enjoy!!

  • 2 cups graham crackers (broken into pieces)
  • 1/2 cup milk chocolate chips
  • 1/4 cup dark chocolate baking squares, chopped
