Tomato, Zucchini, and Caramelized Onion Galette

This summer we had tons of tomatoes and we started not to know what to do with them. I decided to make an easy Tomato, Zucchini and Onion Galette. Galettes are very versatile, and you can substitute other vegetables and cheese to this dish.

Begin by frosting the prepackaged puff pastry according to instructions on the package. Lay it out flat on a baking tray. Prepare the ingredients. Begin by cutting up the onions. Add 1/8 cup of butter into a frying pan. Turn oven to medium. Add the onion and cook slowly until the onions are nicely caramelized. This can take a while as you do not want to burn the onions.

While the onions are cooking, slice the cherry tomatoes in half. You can also keep them whole if you have smaller tomatoes. Slice the zucchini.

Cover the puff pastry with grated cheese. Add zucchini slices on top. The next layer would be the onions. Add a nice thick layer to the zucchinis. Finally add all the tomatoes.

Sprinkle with thyme, salt and pepper. Generously sprinkle some more cheese on top. Fold the edges up to help contain the goodies.

Bake in a 400 degrees oven for 20 minutes or until the crust is nice and golden.

Remove from the oven and let it sit for about 10 minutes before slicing into pieces. Enjoy!!

  • 2 zucchinis
  • 4-5 cups cherry tomatoes
  • 4 cups grated sharp cheddar
  • Thyme
  • 1/8 cup butter
