Blueberry season is almost over. During this season the berries are sweet and delicious. Of course sometimes you get too many and they start getting wrinkly and squishy. This makes them perfect for making fresh blueberry sauce for pancakes or crepes.
First start with 2-3 cups of blueberries. Add a tablespoon of honey. Pour enough orange juice to cover the bottom of the pot. Don’t pour too much since you want your sauce to be nice and thick.



On medium heat, boil the blueberries for 4-5 minutes. During this time the blueberries will burst and release all their sweetness.


To thicken the sauce, take 1-2 tablespoons of cornstarch and mix it with some water to make a white slurry. Slowly pour some of the white mixture into the blueberry sauce and stir. Add more of the slurry until you get the consistency you want. Make sure to wait a minute or two before you add more. It does take some time to thicken.

Let the sauce cool to room temperature. Serve over pancakes or crepes!
