Some days I feel like a crumble or a crisp and other days I just want a pie. I decided to combine both of these to make a pumpkin pie crumble. A nice sweet and smooth pie topped with crunchy crumble! Yum.
Start by preheating the oven to 425F.



Make the pumpkin pie filling. In a mixing bowl, combine 2 eggs, 15 oz pumpkin puree, 2 cups Oatmilk, 1 1/2 cup sugar, 2 tbsp cinnamon, 1 tsp nutmeg, 1 tbsp cornstarch and 1/2 tsp salt.



Pour the pie filling into an 8 inch baking dish. Bake for 30 minutes. In a separate bowl, mix 1/2 cup brown sugar, 1 cup white flour, 1 teaspoon cinnamon, a pinch of salt and 6 tablespoons of melted butter. This will form your crumble.




After the pumpkin filling has baked for 30 minutes, add the crumble topping. Make sure to leave large chunks. Reduce the oven heat to 350F and bake the crumble for 20-30 minutes or until the filling has set and the top is nice and brown.
Remove from oven and enjoy!! Goes great with a dollop of whipping cream or vanilla ice cream.

- 2 tbsp cinnamon
- 1 tsp nutmeg
- 1 tbsp cornstarch
- 1/2 tsp salt

- 1 teaspoon cinnamon
- a pinch of salt (omit if using salted butter)
- 6 tablespoons melted butter
