Tomato Cheese Bake

This is a take on the feta tomato tik tok recipe. I decided to try using Boursin instead as I saw some people use this instead of feta. I think it still turned out great and will make a great quick weekday recipe that I will use in the future.

For this recipe, I don’t have exact measurements. I used about 2 cups of tomatoes.

To this I added crushed garlic, olive oil and pepper.

I chose to use a flavored cheese just to add more to the recipe but I would love to try other variations.

Place the cheese right in the middle of your tray.

Bake for about 30 minutes or until the tomatoes are nice and toasty and the cheese is brown and gooey.

Mash ever thing together.

It actually doesn’t look too appealing at this stage.

At this point I tossed in some chopped fresh spinach.

and plenty of pasta. Remember to season your water when you are making the pasta.

Mix everything well and enjoy.

Cheese Tomato Bake

  • one boursin cheese or block of feta
  • 4 cups of penne
  • 2-3 cups of cherry or grape tomatoes
  • 2 cups chopped spinach
  • 3 cloves of garlic, chopped
  • olive oil
  • pepper
  • optional: other vegetables work out great; I have tried zucchini and cauliflower

In a casserole pan, place your tomatoes so they are a singe layer. Drizzle with olive oil and add three crushed cloves of garlic. Toss together.

Bake at 375 Degrees for 30 minutes. The tomatoes should develop a nice browned color.

Meanwhile, boil your pasta following the directions on the box. Remember to add salt to the water.

Mash the tomatoes and cheese together. Toss in the spinach and mix to wilt it.

Add pasta to the pan and toss everything together.

Enjoy.
