I had a bunch of chickpea flour that was about to expire, I looked up a bunch of recipes and discovered that you can make a bread out of chickpea flour called socca bread. It is traditionally found in Europe and eaten as a snack. I also saw that they used this bread to make gluten free pizza crusts so I decided to try it out.

In a mixing bowl, add 1 cup of chickpea flour, 1 tbsp oregano, 1 tsp garlic powder, 2 tbsp olive oil, and salt and pepper. Slowly add in 1 cup of water to make a chickpea slurry. Let the mixture sit for about 30 minutes. This will help the chickpea flour absorb the water.

Preheat an oven at 450F (230C).Line a baking tray with parchment paper. Carefully pour the batter onto the baking sheet and place it into the oven and cook for about 15-20 minutes or until the batter starts browning on the edges.
Take out the socca bread and cover with a layer of tomato sauce and top with your favourite pizza toppings. We like pineapple and ham. Cover everything with some mozzarella. Place back into the oven for another 10-15 minutes.

Take out of the oven, slice and enjoy!!
