Pakoras are a tasty Indian fried snack that is made with chickpea flour (gram flour) and spices. You can make pakoras with a lot of different ingredients like carrots, cauliflower, and onions. I decided to make some a mixture of celery root and carrots.
When cooked celery root has a light celery taste but can also be used as a potato substitute. It is an interesting root to cook with. This is an easy recipe to make. Start by grating 1/2 cup of carrots and 1/2 celery root.


Add 1/2 cup chopped cilantro, 2 cups chickpea flour, 3 tsp garam masala, and 1/4 tsp salt. Slowly add the 1 cup of water. You may not need all of it. Mix until you get a pancake batter consistency.

In a frying pan, heat up some canola oil. Cook at on medium heat. Cooking at a too low temperature would make very oily pakoras. Too hot and the dough will not cook fully. Drop the pakoras into the hot oil and fry until it gets a dark brown colour. Place the cooked pakora on a paper towel to absorb any excess oil. Serve with some tamarind dipping sauce! Enjoy hot!
