Peanut Butter Cookies

I am in the search of a super easy healthy cookie.  My first attempt was this peanut butter cookie.

What you need is an egg, 1 cup peanut butter, maple syrup and some coconut flour.

Mix all of the ingredients together to form the cookie batter.

Add more flour if the batter is too soft. You want it to be scoop-able.

With a cookie scoop or spoon portion out the cookie dough. I made about 24 cookies.

To make the cookies pretty I pressed each one with a fork to give that classic peanut butter cookie look.

Bake for about 15-20 minutes until the cookies develop a golden color.

The coconut flour made the cookies a little grainy so if you don’t like that then you might not like this recipe. Enjoy with a glass of milk.

Peanut Butter Cookies – 2 dozen

  • 1 cup of peanut butter (I use smooth)
  • 3/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1 egg

Preheat the oven to 350 degrees. Combine all ingredients together until they form a nice thick batter.  Add more flour if it is too sticky. With a cookie scoop or spoon, portion out the batter into about 24 cookies.  Press each cookie with a fork.

Bake for about 15-20 minutes. They will be ready when they turn a nice golden brown.  Enjoy them with a glass of milk.
