
I know everyone is busy with work, life or kids. Sometimes making something delicious for dinner can be daunting and tricky. I decided to make something that I’ve had as a kid. Its comforting and easy! Cheesy potato hashbrowns.


Dice a medium yellow onion and saute it in a pan. Add the 1/4 cup butter. Cook until the onions become translucent. I find cooking the onion before hand gives a better caramel flavour.


When the onions are cooked, set them aside. In a mixing bowl, add the thawed hashbrowns. Add the can of chicken soup, 1 cup of sour cream, and 1 cup shredded cheddar cheese.


Mix all the ingredients well. Add the onions and mix again.

In a small casserole dish, add the mixture. Sprinkle the rest of the cheese on top. Bake it in a preheated oven (350 degrees) for 45-50 minutes.

Take it out of the oven and enjoy hot! You’ll be surprised how quickly kids (and adults) eat this up.

- 1 bag frozen hashbrowns (thawed)
- 2 cups of shredded cheddar cheese
- 1 cup of sour cream
- 1 can of cream of chicken soup
- 1 medium yellow onion
- 1/4 cup of butter
