Cauliflower Mashed Potato

Here is an easy way to add some veggies to your meals.  You have already seen something like this in these Sneaky Shepherd’s Pie.  It is also a way to make your mashed potato lighter and healthier.

For this recipe you need one cauliflower and three russet potatoes.

Peel and dice the potatoes, add to the instant pot.

Cut the cauliflower into bit sized pieces.  Add to the instant pot. Turn on the instant pot to manual high pressure for 15 minutes.  When done, quick release.

To  this add butter, milk, broth, nutritional yeast, and pepper.

Use an immersion blender to blend until smooth.  (I think I added just a little too much broth this time.)  If you like your mashed potato thicker, add less water.  (I will have the correct amounts in the recipe below.)

Serve as you would any mashed potato.

Cauliflower Mashed Potato

  • 3 Russet Potatoes
  • 1 Cauliflower
  • 3/4 cup of milk
  • 1/4 cup of broth
  • 1/4 cup butter
  • 2 tbsp Nutritional Yeast
  • pepper to taste

Dice the potatoes and cauliflower and add to the instant pot. Turn on the instant pot to manual high pressure for 15 minutes.  When done, quick release. To  this add butter, milk, broth, nutritional yeast, and pepper. Use an immersion blender to get a smooth texture. Serve like any mashed potato.  Enjoy.
