This is super easy recipe that can be made for a side dish to your meal. I love oven roasting eggplants to get them to the nice caramel colour. Prepping the eggplant does take a bit of time since you would need to get the eggplant to marinate for at least 30 minutes. This process helps take a bit of moisture out as well as prep the eggplant for baking.
Wash and slice the eggplant. I like leaving them on the thicker side. Set aside while you prepare the marinade.
For the marinade, mix together 1 tbsp oyster sauce, 1 tbsp honey, 1 tsp soy sauce and 1/4 tsp five spice powder. Mix together and then add 1/2 tbsp rice vinegar.
Marinate the eggplants in the sauce for at least 30 minutes but it does taste better if its been sitting for 1 hour. Once marinated, line a baking tray with parchment paper and preheat an oven to 400 degrees. Place eggplant on the baking sheet and bake for 30-40 minutes. Turn occasionally to prevent sticking.
