Carrot and Ginger Salad Dressing

I love going to Japanese restaurants and getting salad with carrot and ginger dressing. Sometimes I crave this dressing at home.  I decided to try to make my own version.  After looking at a couple recipes, I found one that looked fairly easy.

Make the dressing by taking 3 medium carrots and coarsely chop them. Peel and cut 1/4 cup ginger. I use less ginger than regular recipes because I do not like it too strong. You will also need 1/4 shallots. Cut this coarsely and combine all three ingredients.

In a separate bowl, portion out 1/4 cup water, 1/4 rice vinegar, 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1/2 cup vegetable oil and a dash of salt.

In a food processor, chop up the carrots, shallots, ginger and liquid until you get a nice puree.

You may have noticed that the carrots I used was pale yellow and purple so my puree because a pinkish colour. If you used orange carrots, you would get something that resembles what you get from a restaurant.

The dressing works well with any salad and stores in the fridge for about a week!

  • 3 medium carrots
  • 1/4 cup ginger
  • 1/4 cup shallots
  • 1/4 cup rice vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • salt to taste
