The weekends are my favourite because I get to wake up and make pancakes. These pancakes do take a bit of time but it is worth the extra effort.
Prepare this pancake mix by measuring out the dry ingredients. In a bowl, mix together 3/4 cup of flour, 2 Tbsp of powdered sugar and 1 tsp of baking powder.
In separate mixing bowls, separate 2 egg whites from the egg yolks.
Add 1 tsp of cream of tartar to the egg white. This will help keep the whites fluffy when you beat them.
Beat the egg whites until they are nice and fluffy. You want the egg whites to hold its shape.
Set the egg whites aside while you mix the rest of the ingredients. Place the egg yolks in a measuring cup. Fill the measuring cup with milk until it reaches 1 cup. You want about 1 cup of wet ingredients. Combine the yolks and the milk.
Melt 1/4 cup of butter into the microwave. Slowly stir the butter into the milk mixture.
The butter will harden but that is ok!
Slowly mix the milk mixture with the flour mixture. You want to butterhe batter smooth.
Once the batter is combined well, take half of the egg whites and gently fold into the batter.
Mix the remainder of the egg whites when the first batch is completely combined. Don’t over mix because you don’t want the batter to go flat.
Pan fry the batter by gently scooping the mix with a ladle. Cover the pan when cooking. Cook on medium low until both sides are golden brown (3-4 minutes each side).
Set the pancakes aside while you make the bananas. Slice the bananas (not to thin) and generously sprinkle both sides with sugar.
In a butter or greased frying pan, pan fry the bananas until both sides are caramel in colour.
Serve the bananas on the pancakes and enjoy your delicious breakfast!!
If you don’t want to have the bananas, thats ok! Make a smiley face instead.
