Polenta

Polenta is an easy and versatile dish that can compliment meats and veggies. Polenta is a porridge made from cornmeal. When it cools, it can be sliced and fried.

To make polenta, boil 4 1/2 cups of chicken broth in a pan.  Slowly add 3/4 cups of cornmeal. Pour it slowly and stir as you go. If you pour it too quickly, you will get lumpy polenta.

Stir the cornmeal mixture and cook on medium low for about 20 minutes.

When the cornmeal has thickened and become silky, stir in 1 Tbsp butter and 1/2 cup of grated parmesan cheese.

Once the cheese has melted, serve the polenta right away for a creamy porridge texture or cool it for a thicker texture. Try it with some Beer Braised Beef! Enjoy!

  • 1/2 fresh parmesan cheese, grated
