Finally I found a new favorite side dish for potlucks and hosting dinner parties. It is simple and can be made ahead of time. It is pretty looking and is super tasty. It is extremely customizable and you can always add your favorite vegetables and substitute with vegan cheese.
For my recipe I used onion, tomato, mushroom, basil, garlic, zucchini and Parmesan cheese.
Begin by slicing the veggies, dicing the onion, mincing the garlic and grating the Parmesan cheese.
Saute onions with a little oil until soft, about 3-4 minutes. Add garlic and stir. Place this as your first layer.
On top, add some grated cheese and chopped basil.
Now the fun part. Layer your veggies, alternating them until the dish is filled. Try to pack them as tightly as possible.
Sprinkle the remaining amount of cheese and basil on top.
Cover with aluminum foil or lid and bake in a 350 degree oven for about 30 minutes. Uncover and bake for another 30 minutes until golden brown.
Easy Vegetable Bake
(These are approximate as it will depend on the size of your casserole dish)
- 2 garlic cloves
- 2-3 zucchini
- 1 onion
- 3-4 tomatoes
- 1 cup of mushrooms
- 1-2 cups of Parmesan cheese
- 1 cup of basil
Preheat your oven to 350 degrees.
