Easy Peasy Vegetable Bake

Finally I found a new favorite side dish for potlucks and hosting dinner parties.  It is simple and can be made ahead of time.  It is pretty looking and is super tasty.  It is extremely customizable and you can always add your favorite vegetables and substitute with vegan cheese.

veggie-bake-7  For my recipe I used onion, tomato, mushroom, basil, garlic, zucchini and Parmesan cheese.

veggie-bakeBegin by slicing the veggies, dicing the onion, mincing the garlic and grating the Parmesan cheese.

veggie-bake-2Saute onions with a little oil until soft, about 3-4 minutes. Add garlic and stir. Place this as your first layer.

veggie-bake-3On top, add some grated cheese and chopped basil.veggie-bake-4Now the fun part.  Layer your veggies, alternating them until the dish is filled. Try to pack them as tightly as possible.veggie-bake-5Sprinkle the remaining amount of cheese and basil on top.veggie-bake-6Cover with aluminum foil or lid and bake in a 350 degree oven for about 30 minutes.  Uncover and bake for another 30 minutes until golden brown.  veggie-bake-8

Easy Vegetable Bake

(These are approximate as it will depend on the size of your casserole dish)

  • 2 garlic cloves
  • 2-3 zucchini
  • 1 onion
  • 3-4 tomatoes
  • 1 cup of mushrooms
  • 1-2 cups of Parmesan cheese
  • 1 cup of basil

Preheat your oven to 350 degrees.

Slice the vegetables into 1/2 inch thick slices.  Dice onions and mince the garlic. Roughly chop basil. Grate about 1 cup of Parmesan cheese.

Saute onions with a little oil until soft, about 3-4 minutes. Add garlic and stir. Place this as your first layer. On top, add some grated cheese and chopped basil.

Layer your veggies, alternating them until the dish is filled. Try to pack them as tightly as possible. If you have a round container you can layer them in a spiral. If you have a rectangular container, layer them horizontally.  Sprinkle the remaining amount of cheese and basil on top.

Cover with aluminum foil or lid and bake in a 350 degree oven for about 30 minutes.  Uncover and bake for another 30 minutes until golden brown.
