Chocolate Chip Oatmeal Sourdough Cookies: What to do with Sourdough Discard (And Other Variations)

I have had my sourdough starter for a couple years now.  The trouble that I have with it is knowing what to make from my sourdough discard.  Yes I could make sourdough bread, or sourdough waffles but I get tired of having it every week.  I stumbled across this recipe for sourdough cookies and made some modifications.  They turned out pretty good.  And these little babies are super easy to make.  It is all a matter of stirring together the ingredients and baking them.  This version I made chocolate chip cookies but I have also made plain ones, chocolate ones, and even savory ones.   I find this recipe very versatile and and adjustable.

To start this recipe, feed your sourdough and have about 1/2 cup discard available.  The other ingredients vary depending on what I feel like making that day.  Typically I use coconut oil, coconut sugar, chocolate chips, flour and oatmeal.

sour dough cookies 1First, cream together the coconut oil and coconut sugar. There is no need for a electric blender. I usually make this recipe by hand.  I told you this recipe is easy.

Add in your sourdough starter.

Then add the chocolate chips and oatmeal. Mix until combined.

Finally add in the flour.  If you want a cakey cookie, add all the flour in. If you want it a little crisper reduce flour to 1 cup. (or in my case replace the 1/4 cup with oatmeal.)sour dough cookies 6Use a 1 oz cookie scoop and portion out cookies.  Bake for about 10-15 minutes or until golden brown.

Place cookies on a cooling rack and allow to completely cool.

Sourdough Cookies

Basic Sourdough cookies

  • 1/2 cup coconut oil or butter
  • 3/4 cup coconut sugar or 3/8 cup coconut sugar and 3/8 cup xylitol
  • 1/2 cup sourdough starter/discard
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking powder

Chocolate Chip Oatmeal Sourdough cookies

  • 1/2 cup coconut oil
  • 3/4 cup coconut sugar
  • 1/2 cup sourdough starter/discard
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup oatmeal

Other variations:

Chocolate Sourdough Cookies

  • 1/2 cup coconut oil or butter
  • 1 cup coconut sugar or 1/2 cup coconut sugar and 1/2 cup xylitol
  • 1/2 cup sourdough starter/discard
  • 1 tsp vanilla extract
  • 1  cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder

Bread Savory Sourdough Cookies

  • 1/2 cup vegetable oil
  • 1/2 cup sourdough starter/discard
  • 1 tsp salt
  • 1 tbsp coconut sugar
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking powder

For all these recipes:

Preheat oven to 360 Degrees.  Cream together coconut oil/butter and sugar. Add sourdough starter and mix well. Add all other dry ingredients and scoop out with a cookie scoop.  Bake for about 10-15 minutes or until it is golden brown.  Place cookies on a cooling rack and allow to cool completely.  Store in a air tight container.  Makes about 20  1 oz cookies. Enjoy!

  1. These cookies are delicious! I have tried many sough dough cookie recipes but the cookies usually come out bready. These are just like I like them, crispy and morish. I cut back on the sugar to only 1/2 a cup, but will be able to cut back a little more especially if doing the chocolate chip version. Thanks for the recipe.
