Salads can be a very boring or interesting. When people think of salads, they think of leafy greens or even something like pasta salads. I came across this salad idea from a friend. She used a grater to create zucchini pasta. I thought it was neat and remembered that there was salad that was created with the same technique too.
To make the shaved zucchini take the grater and shave the zucchini into thin strips. Place this in a bowl. I used about 2 medium zucchinis.
Next I thinly sliced the white onions. I don’t put a lot because it has a strong flavour when it is raw. I used about 1/4 of a small onion.
To give the salad a nice variety of colour, I add some red pepper thinly sliced.
Last of all, I add a bit of an orange colour by shaving some carrots. I used 2 carrots.
To make the salad dressing, add extra virgin olive oil, balsamic vinegar, lemon juice and salt and pepper to a container. Mix well. Add some maple syrup for sweetness. You may have to adjust the flavours to your liking. I don’t have an exact recipe for it.
Add the salad dressing and let the salad sit for a couple of hours before serving. This will help the carrots and zucchini soften as well as absorb the flavours. It makes a fancy side salad for any dish. Enjoy!!
