Everyone has those weeks where they don’t have time to make any sour dough treats and of course who would want to toss out the starter. This recipe is so quick and easy that you would want to make this all the time!
All this recipe needs is 1/2 discarded starter (no need to let it rise), 1 cup lukewarm milk, 3 eggs, 3/4 teaspoon salt and 1 cup flour.
Start by mixing the starter, eggs, milk and salt together. Slowly stir in the flour. Don’t over mix!!! You want the mixture to be slightly lumpy like pancake batter.
Grease your muffin tins. I like to melt butter and pour a small amount in each one.
Pour the batter in up to the very top and bake in a preheated 450 degree oven for 15 minutes. Reduce the heat to 375 degrees and bake for another 15-20 minutes until the pop overs have risen and have become golden brown. These are best eaten fresh from the oven!! Enjoy!
