Bubble Waffle

My son loves bubble waffles, but they are so expensive. (They are delicious though.) We decided to buy a bubble waffle pan and attempt to make our own. The recipe is pretty simple but making the waffles evenly brown is tricky.

For this recipe, you will need to prepare this in advance as you need to let the batter rest in the fridge for about 30 minutes. We have made modifications a couple times and we are pretty happy with the results.

In a bowl, beat together the eggs, tapioca starch, custard power, vanilla, baking powder and milk. Then add the flour and mix well. Leave in the fridge for 30 minutes. The batter will be quite runny.

Heat up your bubble waffle machine on a low temperature and spray a light coating of oil. I used setting two on my stove top.

Fill the waffle pan until the bubbles are full. Close the lid and flip over right away to make sure both sides are coated. Allow to cook for 3-5 minutes flipping over ever couple minutes. I continue to flip and check to make sure the waffle is golden brown on both sides. You will need a fork to help you remove the waffle. Once done, allow the waffle to cool and get crispy. Enjoy.

Bubble Waffle Recipe – makes 4 waffles

  • 2 eggs
  • 2 tbsp custard powder
  • 3 tbsp tapioca powder
  • 1/2 cup sugar
  • 1 tbsp vanilla
  • 2 tsp baking powder
  • 1 cup of milk
  • 1 cup flour

Mix together the eggs, custard powder, tapioca powder, sugar vanilla, baking powder and milk. Slowly add the flour and mix well. The batter will be runny like a crepe batter. Place in the fridge and allow to sit for 30 minutes.

Heat your bubble waffle machine on low (#2 on the stove top). Spray the pan with a light coating of oil. Fill the bubble grooves full of batter. Close the lid and flip over to allow the batter to coat the other side. Cook for 2 minutes, then flip and cook for another 2 minutes. Continue flipping and checking until the waffle is golden brown. It should take about 5 minutes. Remove from the pan using a fork. Allow to cool and get crispy. Enjoy.
