In an effort to reduce food waste, I decided to try out a recipe that I thought was pretty weird. Normally you don’t eat banana peels and they mostly end up in the compost but this recipe uses the peels to make vegan bacon!
Begin by peeling the bananas leaving long strips. Using a spoon, carefully scoop out the white part of the banana peel.



Place the banana peels in a bowl.
To make the sauce combine, 1/2 tsp garlic powder, 1 tbsp maple syrup, 3 tbsp low sodium soy sauce, 1/2 tsp smoked paprika and 1 tbsp oil.


Pour the sauce over the banana peels and leave for about 10 minutes.


In a frying pan, add some olive oil. Lay the banana peels on the frying pan and fry for 8-10 minutes.



The peel will be slightly soft but will harden when cool. Don’t over fry it because burnt banana peels taste bitter!
