I never get rid of pumpkin seeds after making pumpkin puree or when carving a pumpkin. They are just so tasty when roasted. It makes a perfect snack.
After collecting the seeds, clean the seeds thoroughly to remove the slimy coating and any leftover stringy innards.
Preheat oven to 350F. Mix seeds with olive oil. Season with salt and pepper. You can also add your favourite seasonings to give it a different taste.
Bake seeds until dry and crispy. This should take about 30 minutes. Make sure to stir every 10 minutes to prevent burning and to allow the seeds to cook evenly.
Remove from oven and let cool. Enjoy!
