Banana Cream Pie

This is one of my dads favorite pies. Its creamy but not too sweet. A perfect pie for any occasion.

If you want simple. you can make this pie by using store bought vanilla pudding but the best way is to make your own pudding. (and if you have time, your own pie shell)

To make this recipe, you need bananas that are not super ripe. This will give the pie some texture. You also need half and half cream, egg, sugar, cornstarch (or custard powder), vanilla and a pie shell.

Beat the sugar and the eggs together well. To this add the vanilla.

Then to this add the cornstarch (I used custard powder since this is what I had), and the half and half. Mix well and then place on medium heat. Stir constantly as the cornstarch will start clumping.

Continue stirring as the custard will start thickening. You don’t want it to get lumpy. Once the custard has thickened, set aside and allow to cool. Remember to place a layer of plastic wrap right on the surface of the pudding to make sure that the custard doesn’t form a skin.

If you feel ambitious, you can make your own pie shell, but I think the store bought one work just as well. Bake following the instructions.

Now to assemble. Cut up about 4 bananas. Start with a layer of banana then top with custard. Follow with another layer of banana and then another layer of custard.

Finally add a small layer of banana right in the center of the pie. This will give the pie a little more height. Then cover the pie with the remaining custard. This is where I would stop if you are making the pie ahead of time. Place a layer of plastic wrap to make sure a skin doesn’t form.

To top this pie off you will need some sweetened whipping cream. Use some shifted icing sugar to sweeten the whipping cream and whip until stiff peaks form.

When you are ready to serve, dollop some whipping cream on top of the pie and decorate with some extra banana slices. Enjoy.

  • 2 cups half and half cream
  • 1/2 cup white sugar
  • 3 tablespoon corn starch (or custard powder)
  • 3 whole eggs
  • 1 tablespoon vanilla
  • 4-5 bananas, preferably not too ripe.
  • sweetened whipping cream (1 cup whipping cream with 1-2 tablespoon icing sugar)
  • frozen pie shell (deep dish)

In a sauce pan, mix together the sugar and the eggs. Add the corn starch/custard powder and mix, add the half and half cream and vanilla. Mix well. Place on medium heat and stir constantly as you do not want the mixture to get lumpy. Continue stirring until the mixture thickens. Cool and set aside. Cover with some plastic wrap on the surface of the custard to make sure a skin doesn’t form on the custard.

Bake your pie shell following the package instructions and cool.

Whip the whipping cream and icing sugar until stiff peaks form.

Slice about 4 bananas. Assemble the pie by layering a layer of banana on the pie shell, then some custard, followed by another layer of banana and custard. Add a final layer of bananas only to the center of the pie, you want to add some height to the pie. Then top with the remaining amount of custard.

Serve by topping the pie with the whipping cream and decorating with a few slices of banana. Enoy!
